有誰會不喜愛香甜濃郁的台式滷肉燥?
聽說每個家庭都有自己的配方
時間材料充裕心情也不錯的話可以弄個誠意滿滿的版本
有點嘴饞想下廚但有點累有點懶的話就來個簡單版本
以下跟大家分享 (雙手奉上)
——— 以下是不專業家常食譜 Recipe, here you go ———
<台式滷肉燥>
4人份
免治豬肉 200g
糖 30g
紅蔥頭 4顆
蒜蓉 3顆
五香粉 1茶匙
醬油 約1湯匙
水 2杯/500ml
油
1) 油蔥酥: 紅蔥頭先去皮切片, 中火下油 (足夠拌炒就好), 油溫後用小火把紅蔥頭拌炒至淺金黃色. 夾起油蔥酥備用.
2) 以中火加熱蔥油, 炒香豬肉, 肉變色後加入一半油蔥酥炒香.
3) 加入蒜蓉,糖,五香粉,胡椒粉拌勻.
4) 加入醬油跟水煮滾, 轉小火煮20分鐘.
5) 加入餘下油蔥酥, 多煮10分鐘收汁.
就好了啦~
*不懶惰的話2)可以先下糖跟兩湯匙水煮成焦糖再下豬肉跟小量蔥油
*想加菇的話可以另外先下油炒菇去腥,不怕草腥味也可以於炒香豬肉後加入
*豬肉下鍋後不要一直拌,先把兩面煎香鎖住肉汁再翻拌
*也可以加點紹興酒,扣點水,1-2湯匙就好
*不同品牌醬油鹹度不一,記緊試味作調整
*如果家裡有冰糖黑糖片糖,也可以混著用增加風味
*那天手邊沒有紅蔥頭,洋蔥湊合用也可以,但就沒有了酥香口感啦
*吃前加點香油/麻油更好吃
<Taiwanese Minced Pork>
Serve 4
Ground Pork 200g
Sugar 30g
Shallot 4
Minced Garlic 3cloves
Five Spice Powder 1tsp
Soy Sauce 1Tbsp
Water 2Cup/500ml
1) Crispy Fried Shallots: Heat some oil over medium until warm, Add sliced shallot in and gently stir until light golden brown. Transfer the shallots to a container and let cool.
2) Heat up the leftover shallot oil over medium heat, add in pork and fry until pork turn brown. Add in half of the fried shallots and stir fry.
3) Add in garlic, sugar, five spice powder and white pepper powder and stir well.
4) Add in Soya sauce and water until boil. Turn the heat to low heat and cook for 20min.
5) Add in the remaining fried shallots and cook for 10min more or until the sauce gets thicker.

*If you are in the mood, you may make some caramel with the sugar and 2 Tbsp of water in (2) before adding in the pork and shallot oil
*You can add raw mushroom or stir-fried ones after the pork is brown.
*Let the pork cook on both sides until brown before stir fry to keep the moist in the pork.
*Replacing 1-2Tbsp of water by Shaoxing Wine can enhance the flavour.
*Different brands of soy sauce gives different level of saltiness. Remember to taste and adjust the seasonings.
*Mix and match different kinds of sugar would enhance the flavour as well.
*If you are out of any shallots, onion can be a substitution, just no more crispy texture though.
*Add some sesame oil on top before serve!
